The site of many famous, historic, Turkish movies The Grand Tarabya holds a certain nostalgia in Istanbul’s collective memory. The famed ‘city resort’ offers a secluded escape form the chaos of the Istanbul streets, with its unmatched spa experience.
The Grand Tarabya Brasserie offers world class international cuisine, with influences from the Tarabya’s past. For example, the French Onion Soup harks back to an old recipe, from the original Grand Tarabya. Here we have the classic French Onion Soup, as prepared from the original recipe, a Grand Tarabya Classic.

Ingedients:
Onions
Black Pepper
Dry Hot Chilis
Fresh Thyme
Butter
Flour
Beef Stock
Bread Bowl

Mixed Cheese
Begin by slicing the Onions. Add them to a hot pan to caramelize. Add Butter and Thyme to the pan continue to cook, caramelizing the Onions. Be careful not to burn the Butter. Once the Onions caramelize, add flour, mix, and then add the beef stock. Turn the heat down and let the mixture simmer for 1 hour - 1.5 hours. Add Salt and Black Pepper.
While the soup is simmering, coat a slice of bread with melted butter, and then with cheese. Put in the oven until the cheese is melted and the bread is crispy.
When finished, pour the soup into a breadbowl, and serve with the crispy cheesy bread on top as a garnish.
